Often sérac: a hard, cone-shaped, pale green, strongly flavoured cheese from Switzerland made from skimmed cow milk and blue fenugreek (Trigonella caerulea); Schabziger, Sapsago. It is usually eaten grated, mixed with butter, or in a fondue.
